Cheesy Veggie Sausages

Not actually a sausage, but a yummy veggie mix with a melt in the middle cheesy filling! In the perfect shape for teeny hands to hold, Yum!

Makes about 10

  • 250g potatoes
  • 1 medium courgette
  • 1 large carrot
  • 1 leek
  • 60g block of cheddar
  • About 60g of flour
  • About 60g breadcrumbs
  • 1 large egg

Peel, chop and boil the potatoes until soft, about 15 mins. Once cooked drain and leave to steam for a couple of mins. Meanwhile, finely slice the leek and soften in a pan with some butter for a few mins. Grate the carrot and add to the leek. Grate the courgette and squeeze as much water out as you can and add to the other veggies. Gently fry until completely soft. Mash the potatoes and add to the cooked veggies and mix well. Cut the cheese into 10 equal size matchstick pieces (mine were roughly 1cm wide and 5cm long). When the mix is cool enough to handle, flatten a couple of spoonful's of the mix in the palm of your hand. Add one of cheddar matchsticks on top and form the mix around the cheese to make a sausage shape. Make sure all of the cheese is covered otherwise it will leak out when cooking. Repeat until all the mix is used then chill for at least 30 mins. Dip each sausage in the flour, then beaten egg then breadcrumbs and fry each one in some oil making sure all sides are browned and serve!
