Edamame Pesto Pasta
For anyone who loves edamame as much as we do, this recipe is another great way to include them into your meal times! Serves 2
- 150g spaghetti
- 100g shelled frozen edamame
- 50ml olive oil
- 25g cashews
- 1 garlic clove
- 25g Parmesan
- 40g fresh spinach
- 40g frozen avo chunks
Cook the spaghetti according to instructions. Add the edamame to a bowl with 2 tbsp boiling water and microwave for 2 mins. In a blender add the microwaved edamame (including the water you added), oil, spinach, cashews, garlic, parmesan, avo and pepper and whizz to make a pesto. You may need to add another. 1-2 tbsp boiling water if it’s too thick. Stir through the cooked spaghetti and serve!
