Pea Pesto
A yummy alternative to normal pesto and a great way to get some extra veg in!
Serves 2 small portions
- 100g frozen peas
- 20g Parmesan
- 2 tbsp olive oil
- 1/4 clove garlic
- 5 basil leaves
- Black pepper
- Squeeze of lemon juice
- To serve I cooked about 80g star pasta but you can use what you prefer
Defrost the peas (either leave out for 1 hour or boil for just 1 min). Put the defrosted peas, Parmesan, olive oil, basil, garlic, lemon juice and black pepper in the blender and blend to a thick sauce. Stir though the warm cooked pasta and serve immediately!
