Sweet & Sour Nuggets

A tasty dinner that will be a hit with your toddler, teenagers, and grown ups! In this recipe we used Quorn nuggets, but feel free to use cooked chicken pieces, or you can keep it with just the veggies!
  • 1 pack of Quorn Nuggets or 2 diced and cooked chicken breasts
  • 1 carrot, halved lengthways and sliced
  • 1 onion, diced
  • 1 green or red pepper, diced
  • 1 clove of garlic
  • 2 tbsp low sat soy sauce
  • 2 tbsp white wine vinegar
  • 2 tbsp ketchup
  • 2 tbsp soft brown sugar
  • 1 small tin pineapple chunks (drained)
  • Spring onion, sliced
  • Dash of sesame oil
  • Rice to serve

Cook the nuggets according to instructions. To make the sauce, mix together the soy sauce, white wine vinegar, ketchup and brown sugar in a bowl and leave aside. Heat some oil in a wok and add your prepared onion, carrot and green or red pepper and fry over a high heat for 4-5 mins. Add the garlic and fry for a further minute. Add your sauce to the pan and simmer for a few minutes to slightly thicken, then stir through the cooked nuggets or diced chicken breast. Stir through the pineapple chunks and a dash of sesame oil, making sure the pineapple has warmed through and serve with your cooked rice. Finish with a sprinkle or spring onions.
